Home of Whisky Bar: The Scots have been making whisky for centuries, certainly long before the first written record of it appeared in 1494, and in all that time the same basic recipe (barley or grain plus water and yeast) has been used. Once the government saw how popular it was, legislation was passed (in 1644) allowing the spirit to be taxed. Needless to say, hundreds of illicit stills sprang up around the country. Hiding the spirit away from prying government eyes, often for years at a time, led to the discovery that maturation in oak casks produced a much more complex and attractive drink – and thus the modern Scotch whisky industry was born.
